The E. coli outbreak in bags of fresh spinach from California in September 2006 was a wakeup call to the food industry about safety and cleanliness standards. The FDA launched the Lettuce Safety Initiative in response E. coli outbreaks in fresh lettuce. Many E. coli outbreaks<span id="more-22"></span> are the result of negligence and unsanitary processes on the part of farmers, ranchers, food packagers, food processors, restaurants and grocery stores. The strain of E. coli bacteria that makes humans sick lives in the intestines of animals such as cows, chickens, deer, sheep, and pigs. The E. coli outbreak in spinach in 2006 was eventually traced to the feces of wild pigs that had entered the spinach farm grounds. Manure can contaminate water, streams and irrigation systems, which can then contaminate produce.</p>
